Isn't it cute!

I knit this a while back for an easy project to finish. I gave it to our friend, since she had her little girl on Ground Hogs Day. I told her to shoot me a picture when she is big enough to wear it.

I started my own FLS (feb. lady sweater) in December. I am to the chest part and I am running out of room on my circulars.

Next week, I'll be in Texas for my birthday.
I am getting so excited!!!!!!

Dinner is Served

Dinner is Served!

Yesterday, I posted my recipe for rabbit tacos. I cannot believe how awesome everything turned out!
After 8 hour on low in the crockpot; I strained the meat from the liquid. The kitchen smelled so good, hints of cinnamon & cumin. I pulled the meat from the bones, saving the liquid for later use. I put the meat into a frying pan, along with a little bit of liquid. This simmered on the stove while I did my chores (feed buns & dogs). I cranked the heat on the meat to get some crunchy's on one side.
My sister came over for dinner. When she heard what I was making, she couldn't pass it up. We fried shells, topped with fresh limes & cilantro. Dicky made up some re-fried beans. I bought Spanish Rice from my local taco joint around the block. I'm terrible at making Spanish rice.Anyone have a good recipe with chunky of tomatoes?

What a great midweek dinner.
I think this dinner won DH over on my meat raising hobby.

First Rabbit Butcher

Saturday I harvested my first rabbit. Dicky got a picture of me slicing the belly open. I'd have to say that was as easy as cleaning quail!

The parts are in the Crockpot today.
I'm making Rabbit Carnitas.

I made a dry rub:

1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon crumbled dried oregano
1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon

Other stuff in the Crock:
1 Rabbit
2 bay leaves
2 cups chicken broth
peppercorns
orange (1/2)
I sprinkled the dry rub on the parts. Added a couple whole peppercorns & 1/2 a blood orange. Covered it with chicken stock. Low. I started it at 7:15am. I get home at 5, so I'll see how it tastes then!
